Quick, Healthy Casseroles
Featured Recipe: Squash-Topped Cottage Pies
Make perfectly portioned comfort food with lean meat and vegetables.By Jessie Price, Food Editor, EatingWell January/February 2008 Warm casseroles are the epitome of comfort food. We gave shepherd’s pie—usually made with lamb and potatoes—a facelift. Our healthy Squash-Topped Cottage Pie recipe uses lean beef and creamy squash to cut fat and calories and boost vitamins and nutrients. We also added sautéed spinach for extra iron, calcium and folate. And another twist: these are individually portioned little pies (which helps keep the cooking time short). If you love the idea of individual portions, or if you just need a little help with portion control, try some of these recipes that are also baked in just the right size: Mini Chile Relleno Casseroles, Muffin Tin Crab Cakes or Turkey Mini Meatloaves.
