Use a cup of the Fresh Tomato Salsa to make this easy guacamole. Mash a few avocados, stir in lemon juice and you're done! Guacamole will turn brown if allowed to sit and is best made shortly before serving.
Makes 8 servings, about 1/3 cup each
ACTIVE TIME: 10 minutes
TOTAL TIME: 10 minutes
EASE OF PREPARATION: Easy
3 avocados, diced (about 3 cups)
1 cup Fresh Tomato Salsa (recipe follows) or prepared salsa
1 tablespoon lemon juice
1/4 teaspoon salt
Using a potato masher, mash diced avocados in a medium bowl, leaving them a little chunky. Add salsa, lemon juice and salt; stir to combine.
NUTRITION INFORMATION: Per serving: 96 calories; 8 g fat (1 g sat, 6 g mono); 0 mg cholesterol; 6 g carbohydrate; 1 g protein; 4 g fiber; 108 mg sodium.

Delicious taste, I'd like some healthy suggestions of what to eat it with. The traditional tortilla chips signifigantly reduces the "healthy for you" factor.

There was a comment in the recipe about the guacamole turning brown. To avoid this color change save seed of avocado and place seed in guacamole when storing leftovers or you can keep seed in guacamole to stop the browning if you aren't too picky about the seed in your serving bowl. I prefer to see the seed rather than the brown guacamole.

Question for Tammy: I've tried several times keeping the seed in guacamole and just in a left over half of an avocado, but it never prevents it from turning brown. Have any suggestions?

A couple more practical tips for the guac turning brown. Make certain to put lime juice in it, this adds more flavor and the acid help keep it fresh. The other more practical tip is to take a sheet of plastic wrap and put it down in the bowl of guac, if the air can't get to the guac it stays fresher and doesn't brown.

NO Tomato in Guacamole!!! American..... no seed. Man From N.C. RIGHT, put plastic wrap tight on top, no air no brown. Where is the frikin cilantro and lime boys and girls ?

If you use lime juice instead of lemon, your guacamole will keep it's bright green color longer and stay fresher, too.
