While this quick, tropical salsa goes perfectly with Beer-Battered Tilapia, it also complements chicken, pork or other mild white fish.
Makes 4 servings, about 1/3 cup each
ACTIVE TIME: 10 minutes
TOTAL TIME: 25 minutes
EASE OF PREPARATION: Easy
1 ripe mango, diced (1 1/2 cups) (see Tip)
1/4 cup finely chopped red onion
2 tablespoons lime juice
2 tablespoons rice vinegar
1 tablespoon chopped fresh cilantro
Combine mango, onion, lime juice, vinegar and cilantro in a medium bowl. Let stand for 15 minutes; stir before serving.
NUTRITION INFORMATION: Per serving: 50 calories; 0 g fat (0 g sat, 0 g mono); 0 mg cholesterol; 13 g carbohydrate; 0 g protein; 1 g fiber; 2 mg sodium.

TIP: Tip: To cut a mango:
1. Slice both ends off the mango, revealing the long, slender seed inside. Set the fruit upright on a work surface and remove the skin with a sharp knife.
2. With the seed perpendicular to you, slice the fruit from both sides of the seed, yielding two large pieces.
3. Turn the seed parallel to you and slice the two smaller pieces of fruit from each side.
4. Cut the fruit into the desired shape.

This was a perfect complement to the tilapia. It makes a lovely presentation, one that I would readily (and easily) serve to guests.

We add half a seeded jalapeno, minced as we like it a little spicier. The salsa is also terrific as a base for soft-shelled crabs.

Very tasty and refreshing with the mango salsa. I added a splash of olive oil to the salsa because we love the flavor. The crust from the beer batter is light and compliments the delicate texture of the tilapia. I found that I had to add a little salt during the saute process.

Your description is incorrect. You slice the long pieces when the seed is parallel and the short pieces when the seed is perpendicular. At any rate, you should find a more explicit, better way of describing how to cut the mango.
