Inside-Out Cheeseburgers

Why put the cheese on top of the burger when half of it just melts off--Instead, form the burger around the cheese so you can char the meat and safeguard the more delicate flavors. Use any mixture of hard or semihard cheeses-Emmentaler and Gouda or Asiago and Parmigiano-Reggiano also pair well.
Makes 4 servings
ACTIVE TIME: 20 minutes
TOTAL TIME: 35 minutes
EASE OF PREPARATION: Easy
1/4 cup shredded Cheddar cheese
1/4 cup shredded Gruyere cheese
1 pound 90%-lean ground beef
1 tablespoon Worcestershire sauce
1 1/2 teaspoons paprika
1/4 teaspoon freshly ground pepper
1. Preheat grill to medium-high or preheat the broiler.
2. Combine Cheddar and Gruyere in a small bowl.
3. Gently mix beef, Worcestershire, paprika and pepper in a large bowl, preferably with your hands, without overworking. Shape into 8 thin, 4-inch-wide patties. Mound 2 tablespoons of the cheese mixture on each of 4 patties, leaving a 1/2-inch border. Cover each with one of the remaining patties. Crimp and seal the edges closed.
4. To grill: Lightly oil the grill rack (see Tip). Grill the stuffed patties over medium-high heat, about 4 minutes per side for medium-well. (Be sure not to press the burgers as they cook or they'll split open and the cheese will ooze out.) To broil: Cover a broiler pan with foil and coat with cooking spray. Broil the stuffed patties in the upper third of the oven, about 4 minutes per side for medium-well. In either case, let the burgers stand for 5 minutes before serving.
NUTRITION INFORMATION: Per serving: 250 calories; 16 g fat (7 g sat, 6 g mono); 74 mg cholesterol; 1 g carbohydrate; 24 g protein; 0 g fiber; 164 mg sodium.

TIP: To oil a grill rack: Oil a folded paper towel, hold it with tongs and rub it over the rack. (Do not use cooking spray on a hot grill.)

This was good, although I overcooked the burgers a little bit.

These were very good. I definately recommend using a hamburger press to make sure they are all the same size. the meat gets a little hard to work with in such small amounts as well...thin patties. But they tasted good.

They were good, but I seemed to cook them a little too much, maybe the bbq was up to high.

This was terrifically good! I added 1/4 t. salt to the mix because no salt made me nervous. Worcestershire and paprika ... who knew? Anyway, this is going to be the standard grilled hamburger for get-togethers from now on. Thank you!

These were delicious! My family raved about them. I used shredded Mexican cheese instead of Gruyere (it was what I had) and they were quite yummy. Keep it coming.

I loved these. I would have never thought of adding paprika to a hamburger recipe. I will add salt next time, though...it really needs it.

I'm not too sure this recipe should be on a website where the title is supposed to be recipes that are "Eating Healthy." Each burger has 16 grams of fat. That's alot!! Considering you haven't even added any toppings or the bun. I would love to come to this website and see recipes using ground turkey for example & lots of different ways to use fresh fruits & veggies into recipes. Just a thought :o)

This is very good but i stepped it up a notch i sauted mushrooms and some veggies and my family liked it very much. i also used seasonings that we like keep up the good taste.

I made these before I ever saw this recipe and they are delicious. I even suggest adding thawed out shredded spinach to the cheese mixture. Or add fresh spinach on top with a tomato.

I really liked this idea! It made them so moist. We grilled mushrooms & onions and put on top. I did add some salt as I salt EVERYTHING.

I used this recipe, but substituted the beef with turkey. I also used Mexican mix shredded cheese and crisp crumbled bacon. My family raved!!!!
