These four easy recipes let spinach take the starring role. Our riff on a traditional Japanese steakhouse salad trades spinach for the iceberg lettuce and dresses it with spicy ginger dressing. Parmesan-flecked spinach cakes are like a crustless version of the Greek favorite, spanikopita. Fresh spinach barely wilts when dressed with a warm shallot-paprika-olive dressing.
