Grilled Peach Sundaes

Fruit on the grill? Most definitely! Try grilling other stonefruit or pineapple too!

Makes 2 servings

ACTIVE TIME: 10 minutes

TOTAL TIME: 25 minutes

EASE OF PREPARATION: Easy

2 peaches, halved and pitted
1 teaspoon canola oil
2 scoops nonfat vanilla frozen yogurt or fruit sorbet
1 tablespoon toasted unsweetened coconut

Preheat grill to high. Brush peach halves with oil. Grill until tender. Place 2 peach halves in each bowl and top with a scoop of frozen yogurt (or sorbet) and coconut.

NUTRITION INFORMATION: Per serving: 154 calories; 4 g fat (2 g sat, 2 g mono); 0 mg cholesterol; 28 g carbohydrate; 4 g protein; 2 g fiber; 41 mg sodium; 319 mg potassium.

Sounds great when you read the recipe, but, beware for those of you who think that it's easy to half a peach and get the pit out! It's not at all. Would have been nice if they had given some direction on how to easily do this. I ended up wasting more peaches than I saved in my futile attempt to de-pit, and thus did not have enough for my Sunday afternoon bar-b-que! :)

This is very easy and yummy. You can use plums also... It is very easy to slice or halve a peach if you use a knife.

If you can't cut a Peach and remove the pit, then you shouldn't be allowed to use a knife, or be out of the house alone...

Although i'm not a huge fan of peaches, I am ice cream! This was very simple and different to try out on the grill. If you can't halve and pit the peaches, you might want to read "How to Halve and Pit Peaches" for DUMMIES!

OK know it alls! there are some tyeps of peaches that the sotnes clings onto the flesh inside the peach. Perhaps in you backwards world you only have the easy kind? Dont be so quick to show your knowledge, you may just prove you ignorance!
