Healthy Peach Recipes and Cooking TipsTasty recipes for juicy summer peachesSummer peaches are the essence of fresh, healthy and delicious. Plus, peaches are low in calories (about 60 each), contain no sodium or cholesterol, and offer a nice helping of vitamins and antioxidants, which are thought to protect the body from aging, heart disease and some cancers. These summer fruits are beautiful to look at and to serve. Toss some in your morning yogurt or breakfast cereal, bake some into a pie or tart, experiment with savory recipes for main dishes or sides, or merely eat them on the go, juice running down your chin and, without a doubt, a smile on your face. Healthy Peach TipsTo peel peaches: Bring a medium saucepan of water to a boil. Immerse peaches in boiling water for 1 minute. Remove with a slotted spoon and plunge into a bowl of ice water to cool slightly. Transfer to a cutting board. Remove the skins with a paring knife. To freeze peaches: Peel peaches (see above). To prevent discoloration, treat with Fruit-Fresh® (an ascorbic acid-based product found in supermarkets) according to package directions. Lay the slices, slightly separated, on baking sheets lined with wax paper or parchment. Loosely cover with plastic wrap and place in the freezer until frozen, 1 1/2 to 2 hours. Peel the slices from the sheets and pack in heavy-duty plastic freezer bags, taking care to remove as much air as possible from the bag. Freeze for up to 1 year. How to pick a peach: Use your nose! Choose peaches with a “peachy” scent, slightly sweet and flowery. Ripe peaches will give a little when gently pressed. The red or blush color on the skin is a characteristic of variety, not ripeness. Avoid any that are overly green—they were picked too early and won’t ripen properly.
