Virtually all types of beans are not only delicious, they’re nutrient powerhouses. On average, just 1/2 cup of beans contains a whopping 6 grams of fiber—that’s about a quarter of the recommended daily intake.  So do your body good and enjoy these high-fiber bean recipes.

Bean Cooking Tips

Rinse those beans: Canned beans tend to be high in sodium. Give them a good rinse to rid them of some of their added salt or opt for a “no salt added” variety.

Soaking dried beans: Soaking dried beans before cooking shortens their cooking time. Soak beans in enough cold water to cover them by 2 inches, for 6 hours or overnight. Alternatively, use the quick-soak method: Place beans in a large pot with enough water to cover them by 2 inches.  Bring to a boil over high heat.  Remove from the heat and let stand for 1 hour.
