Orange juice and cilantro yield a tangy dressing that you'll want to have on hand.
Makes 1 1/4 cups
ACTIVE TIME: 10 minutes
TOTAL TIME: 10 minutes
EASE OF PREPARATION: Easy
1 cup packed cilantro
1/2 cup extra-virgin olive oil
1/4 cup lime juice
1/4 cup orange juice
1/2 teaspoon salt
1/2 teaspoon pepper
Pinch of minced garlic
Puree cilantro, olive oil, lime juice, orange juice, salt, pepper and garlic in a blender or food processor until smooth.
NUTRITION INFORMATION: Per tablespoon: 53 calories; 6 g fat (1 g sat, 4 g mono); 0 mg cholesterol; 1 g carbohydrate; 0 g protein; 0 g fiber; 59 mg sodium.

This is delicious, but I don't know why you'd call something with no vinegar in it a vinaigrette.

I've made this a few times. I usually skip the orange juice and double the lime juice. It is fantastic.

This is lovely drizzled over avocado, hearts of palm and orange sections for a quick healthy salad. I increased the orange juice to tame the lime flavor.

I made this with the salad Eating Well recommended and it was fantastic. I also used what was left to marinade my chicken in before grilling and it also turned out fantastic!
