This green bean recipe from chef Alex Patout of Landry's restaurant in New Iberia, Louisiana, gets plenty of flavor from bacon and onions.

  • 5 slices bacon, chopped
  • 1 pound green beans, trimmed
  • 2 medium onions, finely chopped
  • 12 ounces new potatoes (4-6 small), cut into 1-inch pieces
  • 1 teaspoon freshly ground pepper
  • 1/2 teaspoon salt
  • 4 cups water

  1. Place a Dutch oven over medium heat, add bacon and cook until slightly browned but still soft. Add beans, onions, potatoes, pepper, salt and water. Stir well and bring to a simmer. Reduce heat to maintain a gentle simmer, cover and cook, stirring occasionally, until the beans are very tender, about 1 hour. Uncover, increase the heat to medium-high and cook, stirring occasionally, until thickened and most of the water has evaporated, 20 to 25 minutes more.

My family loved it & didn't mind that I didn't make any additional meat to go with it. My son said it is now one of his favorites! I added some fresh corn to the dish the last ten minutes of cooking time.

Delicious!! We've been getting green beans in our CSA box and this is a delicious way to use them! My kids barely realize they are eating vegetables. I decrease the amount of bacon, using 3 or 4 slices, and this recipe is still a hit. Pros: Tasty, easy, good way to use up green beans.

Easy and delicious We love this. My toddler will eat a whole bowl--we serve it like stew, not a side. The stated serving size of 3/4 cup is a bit small for that. I question the amount of bacon in it. I would prefer if the bacon was referenced by weight rather than number of strips. Five strips of the bacon I typically buy (Trader Joe's applewood smoked) is almost 8 ounces. I suspect the recipe author didn't intend this to have half a pound of bacon in it. I cut back to 4 strips last time I made it, and it was still delicious. Pros: Easy, good way to use of green beans that aren't the youngest Cons: Takes a while to cook

Melt-in-Your-Mouth Good This recipe doesn't require any special skills, and the result is very tasty. These beans reminded me of the way my granny used to cook string beans from the garden--in a pressure cooker, with bacon. My husband is always saying he likes his green beans very well done, but these beans were too well done for him. Pros: Easy Cons: Beans too well done for some. Takes time.

Doesn't taste like it's good for you :) Loved this! Everything about it is perfect. I have tried several different recipes but won't anymore. This is the one :) and we love that it doesn't taste like its good for you!

We all loved it. I served it with baked frozen fish fillets. Pros: My kids and husband loved it, easy Cons: I ate so much my stomach hurt.
