Apple & Veggie Sausage Breakfast Sandwich

This healthy vegetarian breakfast-sandwich recipe comes together in 5 minutes, but has plenty of protein from a vegetarian sausage patty and fiber from the whole-wheat bread and apple to keep you satisfied all morning long.

  • 2 slices cinnamon-raisin bread, preferably whole-wheat
  • 1 frozen vegetarian sausage patty
  • 1 teaspoon raspberry jam
  • 4 thin slices apple
  • 2 tablespoons shredded Cheddar cheese

  1. Toast bread. Microwave sausage patty until hot, about 30 seconds, or according to package directions. Crumble. Spread jam on 1 piece of toast. Top with the sausage, apple slices, cheese and the remaining slice of toast. Cut in half and serve.

Will be among my go-to breakfasts This was a great quick and easy breakfast for a weekday morning. You could even assemble it in the break room on a busy day in the office. Great combo of sweet and savory. This will be one of my go-to breakfasts from now on! Pros: Quick, easy, healthy, delicious

Great Cold, but Better Hot! A quick and easy fix in the kitchen, very tasty too! I thought I'd like something warm on a cold day, so I lightly buttered the outsides of the whole wheat raisin bread first. Then I cooked the sausages in a skillet. After removing them from the heat, I chopped them up, then layered the sandwich with jam, shredded sharp cheddar, crumbled sausage, more cheddar, shaved apple slices and a bit more cheddar. Cooked it over low/med flame for a few minutes, flipped it, cooked for a few more minutes, then plated with the remaining shaved apple slices on the side. Warm, crispy on the outside, packed with flavor through and through. Yum!! A healthy variation on grilled cheese, but with much more flavor! Pros: easy, quick, healthy, light but filling

What a surprise Although I used turkey sausage instead of vegitarian, I could not believe that these ingredients worked so well with each other. Apples and cheese on the same sandwhich? It was great and this is become a regular breakfast meal for me. It took less than 5 minutes to prepare and clean up, which is great for mornings when you dont have much spare time. Pros: Easy/Quick Prep, minimal clean up
