Bok choy serves as a peppery alternative to cabbage in this crunchy and creamy slaw. Try it with barbecued chicken.

  • 1/3 cup reduced-fat sour cream
  • 1/3 cup reduced-fat mayonnaise
  • 2 tablespoons white-wine vinegar
  • 2 teaspoons sugar or honey
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon salt
  • 6 cups very thinly sliced bok choy, (1-pound head, trimmed)
  • 1 large Granny Smith apple, julienned or shredded
  • 1 large carrot, julienned or shredded
  • 1/2 cup slivered red onion

  1. Whisk sour cream, mayonnaise, vinegar, sugar (or honey), celery salt and salt in a large bowl until smooth. Add bok choy, apple, carrot and onion; toss to coat.

Best odd slaw ever! I made this for the first time for four women--we loved it so much we ate it all even though it was 8 servings! I did not use sour cream, used 1/3 c real mayo b/c I didn't have the other, and used Greek yogurt (plain) and Greek yogurt (lime).

BOK CHOY APPLE SLAW I USED THE WHOLE STALK I ALSO USED GREEK YOGERT INSTEAD OF SOUR CREAM BUT RATHER THAN LEAVE IT IN LARGE CHUNKS I PUT IT INTO MY FOOD PROCESSOR SO IT WAS MORE LIKE REGULAR COLE SLAW MY FAMIILY LOVES THIS RECEIPE Pros: GREAT

YUM I love this salad with chicken and walnuts! I've added a little chicken breast for a complete meal. Pros: The dressing is easy to switch ingredients and I've used it for other salads

This was great! I used balsamic vinegar and Greek yogurt instead of the sour cream, turned out great. Pros: Family loved it

This was OK, but far from the best slaw recipe I have had. I am not sure if you aren't supposed to use the green part of the bok choy, as mine got soggy quickly. I'm not going to make this again.

i really love this! its so quick to make and is full of flavour. it turns out really sweet and creamy, it goes wonderfully with almost anything! i've made it a good few times now and it always turns out perfectly. i've substituted low fat natural yoghurt for the sour cream a few times too and the dressing isnt as thick, but it tastes almost identical. definitely recommend this!
