Stuff & Bake, No Need to Microwave
I decided not to microwave peppers...just sliced off tops, scooped out seeds and put in 9 x 13 pan raw. You gotta saute the sausage to make sure it's done. Added 28 oz. can of whole peeled tomatoes, simmered 10 mins. I cooked Rice Select 'Royal Blend' which is a mix of white, brown, wild & red rice and set aside to cool. Folded that into meat mixture along with 1 chopped yellow squash & 1 green zucchini and then the fresh chopped basil. Scoop, stuff & pack into 6 peppers (red, yellow & orange). Add 1/ 4 cup water to pan, cover with foil & cook 350 for about an hour. Uncover, top with smoked gouda cheese and bake additional 10-15 mins. Absolutely FANTASTIC!!
Pros: Super flavorful, colorful & healthy
Cons: Can't think of any!
