Maybe you've never considered cooking broccoli this way, but roasting yields surprisingly good results. The heat concentrates the flavors and caramelizes the natural sugars. A touch of olive oil gives it a crispy, delicious finish.

  • 4 cups broccoli florets
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon salt
  • Freshly ground pepper
  • Lemon wedges

  1. Preheat oven to 450°F.
  2. Toss broccoli with oil, salt and pepper. Place on a large baking sheet (not air-insulated) and roast until the broccoli is tender and blackened on the bottom, 10 to 12 minutes. Serve immediately, with lemon wedges.

Wonderful Broccoli has not been a favorite vegetable for me, but it us so packed with good stuff I want to like it. I love roasted vegetables, so this recipe was a great find for me. I quartered the crowns so kept the florettes in fairly large pieces. At 10 minutes they were still a bit firm but at 12 to 15 minutes they were just right. The roasted flavor was really nice. Next time I am going to try a little truffle salt instead of plain salt to see how it works with the brocolli. I served it with a blackened mahi mahi and it was a nice green side.

You can also add cherry tomatoes, halved, and toss in to the mixture and bake. It is so good! I have fixed it this way many times before and all love it!!

Delicious! I am eating this right now for dinner, and it is fantastic. I added some baby carrots and red pepper flakes to the broccoli, and it is fantastic. I've never had broccoli cooked this way, but I will definitely be eating this again.

Lovely flavor In addition to florets, I added peeled, sliced broccoli stems. I roasted it at 425 degrees because I was also roasting something else at the same time. I took the broccoli out of the oven after 7 min and after another 8 min to toss it a bit and look at it. As it was still too crisp (i.e., hard), I roasted it another 12 min, and then it was perfect--soft but not mushy, and with that caramelized sweetness. I drizzled a bit of lemon over it, and it was a huge hit at supper. Eaten in a flash. Delicious!!!! Pros: easy, healthy Cons: needs to roast longer than specified

Crisp and Dry After 10 minutes the smallest florets were blackened, and after another 2 minutes the bigger florets were also blackened. Some might regard this broccoli as al dente, but to our taste it was simply undercooked. My husband added massive amounts of mayonnaise to his portion to make it palatable. Easy, Simple This recipe made a great addition to leftover pasta. It's a great way to get a serving of vegetables. This is a very good basic recipe for roasting broccoli, and once you've got it down, explore the many different spice combinations. Pros: Quick prep

This recipe was easy and delicious. I slight modified the recipe by roasting the broccoli, oil and salt and pepper for 10 mins. I then drizzled oil mixed with garlic (2 T of olive oil +1 minced garlic clove +sprinkle of red pepper flakes) to the broccoli. I roasted the broccoli plus garlic oil for 3 more minutes. I squeezed lemon juice over the cooked broccoli. The garlic adds a delicious flavor, just make sure not to burn the garlic in the oven! Five stars because it's easy, delicious and healthy.

Made this for dinner tonight for hubby & I. We both liked it. I added Lemon Pepper seasoning that I buy at Trader Joes. So easy to prepare. I will be making this again.

I love broccoli!! I love roasted vegetables!! I don't know why I never thought of roasting broccoli! So glad that I came across this recipe! So fast, so simple, so delicious! I have a feeling that I will crave broccoli prepared this way all the time.
