Whole-grain rice has been minimally processed, just enough to sort and remove the inedible outer husk, leaving the nutritious outer bran layer intact. “Think of the rice kernel like an apple: whole-grain brown rice is the apple with the peel intact and white rice is a peeled apple,” says Jessica Lundberg of Lundberg Family Farms.

Cooking Rice: This might be heretical, but I have been cooking perfect rice for years in my microwave oven, both white and brown rice. It never burns, which was always a problem for me on top of the stove. I start it off on 'high power' for 6 minutes, then lower it to 50 per cent power level for 20 minutes for white rice, 40 minutes for brown rice. Then I fluff and let each stand for 10 minutes. I cook my rice with broth and spices for 'pilaf' variety. I do this for big batches of McCanns whole grain oatmeal too.
