Rachel Johnson

Ph.D., M.P.H., R.D.

EatingWell’s Senior Nutrition Advisor, Rachel Johnson, is a Professor of Nutrition at the University of Vermont. Rachel holds a Ph.D. and a Bachelor of Science degree in Nutrition from the Pennsylvania State University and a Master of Public Health degree from the University of Hawaii. 

Rachel has served on the boards for numerous national health associations, including the American Heart Association and the American Dietetic Association, for which she held the position of Chair of the Commission on Dietetic Registration. She plans to spend the summer in Italy, learning much about healthy eating the Italian way.

What is your favorite food?
RJ: I couldn't possibly pick just one?here are a few: chocolate, Brussels sprouts (I'm serious, I love, love, love them), my son's special shrimp/avocado/rice dish.

What is your least favorite food?
RJ: Liver. I was forced to eat it as a child, ugh....

What is your favorite EatingWell recipe?
RJ: Again, I couldn't possibly pick one. I only wish I had more time to cook so I could try more of them.

What is your pet’s name?
RJ: I don't have one right now.

What is your favorite thing about working at EatingWell?
RJ: The opportunity to share my passion for healthy food with our readers.

What initially sparked your interest in food and nutrition?
RJ: I look my first course in Introductory Nutrition as a freshman at Penn State University and was hooked.

What do you like to do during your time off?
RJ: Garden and take long walks.

What is your guiltiest culinary pleasure?
RJ: Ice cream!

What is your favorite international fare?
RJ: Japanese.

What three adjectives best describe your EatingWell experience?
RJ: Fun, inspirational, educational.
